Two large beets (or the equivalent)
3T Brown sugar
Roast beets (peel, chop, drizzle with oil, season to taste-I just used salt and pepper-and cook on a parchment lined baking sheet at 425 degrees until tender and caramelized, about 30 minutes.)
Tip: wear gloves while prepping beets so they don’t stain your hands.
Peel and section orange (Cara Cara is a great one to use in this recipe).
Brown sugar walnuts. Toast walnuts in pan until warm and fragrant. Reserve. Melt butter in saucepan. Add 2T of brown sugar. Combine and immediately take off the heat. Add in walnuts, stir and pour onto parchment paper. Sprinkle 1T brown sugar and salt to taste. Cool completely.
To assemble salad, simply add greens to plate and divide beets, oranges and brown sugar walnuts.
The salad can be dressed with a mixture of brown sugar, olive oil, balsamic vinegar and salt and pepper to your liking.
